Blog Post 4: Sourdough Oatmeal Cream Pies
Sourdough Oatmeal Cream Pie Recipe:
Cookie
- 1 cup browned butter
- 1/2 cup sugar
- 1 cup brown sugar
- 2 eggs
- 1/2 cup sourdough starter or discard
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 3 cups old fashioned oats
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 2 teaspoons cinnamon
- 2 teaspoons pumpkin pie spice
Butter Cream Filling
- 3/4 cup butter
- 2 1/2 cup powdered sugar
- 1 1/2 teaspoon vanilla extract
- 2 tablespoons heavy whipping cream
- 2 teaspoons cinnamon
- 1 teaspoon pumpkin pie spice
Instructions:
- place butter in a medium saucepan over medium/high heat. stir butter and heat until butter turns golden brown and smells like toffee. set aside to cool to room temp
- pre heat oven to 350 degrees F and line baking sheet with parchment paper
- in a large bowl, mix together cooled butter and sugars. add eggs, sourdough starter/discard, and vanilla extract. mix till smooth
- add dry ingredients to the wet ingredients and mix until all ingredients are combined
- scoop about 1 table spoonful of cookie dough onto baking sheet and press into cookie shape.
- bake for about 8 minutes (times may vary based on cookie size and oven)
- let cookies rest on pan for 1-2 minutes then place on a wire rack to cool
- while cookies are cooling, start on filling recipe
- cut up butter and mix until whipped and smooth. add powdered sugar, vanilla, and heavy whipping cream. mix until combined, scrape sides to make sure all dry ingredients are incorporated
- once cookies are cooled, spread filling onto half of the cookies, then simply place remaining cookies on top of the creamy filling and enjoy!

These were such a tasty treat! I found the recipe on pursuit of homemaking and was so excited to try them out and they did not disappoint! They are big and delicious and the perfect amount of sweetness to satisfy any sweet tooth. I was worried about the frosting being too sweet but since the cookies have a mild sweetness, the frosting adds the sweet to the cream pie that it needs. I added pumpkin pie spice when making them to give them more of a fall taste and it was such a nice touch, I will definitely be making these again!
