Blog Post 5: Sourdough Pumpkin Scones

Sourdough Pumpkin Scone Recipe:

Scone

  • 1/2 cup butter 
  • 2 1/2 cups unbleached all-purpose flour
  • 1/2 cup brown sugar
  • 2 1/2 tsp baking powder
  • 1 1/2 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 egg
  • 1/2 cup pumpkin puree
  • 1/2 cup sourdough starter or discard
  • 1/4 cup heavy cream
  • 1 1/2 tsp vanilla extract
Cream Cheese Frosting
  • 1 1/2 cup powdered sugar
  • 1 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 2 tbsp maple syrup
  • 8 oz block low-fat cream cheese
  • 1-3 tbsp milk
Instructions:
  1. cut the butter into cubes and put it into the freezer
  2. combine flour, brown sugar, baking powder, pumpkin pie spice, cinnamon, and salt together in large bowl. stir to mix
  3. in a separate small bowl, whisk together egg, pumpkin puree, sourdough starter/discard, heavy cream and vanilla extract
  4. mix cold butter pieces into the dry ingredients and mix until coated
  5. add the wet ingredients to the dry ingredients, mix together with spoon, then knead ingredients together with your hands until dough forms into a ball. do not over-knead dough, the less it's handled the better
  6. turn the dough onto lightly floured surface, press into disk about 1-inch thick and cut into 8 triangular pieces (like you would a pizza)
  7. preheat the oven to 400 degrees F, put wedges into freezer for 10 minutes while you line baking sheet with parchment paper
  8. once oven is heated, place wedges onto baking sheet and bake for 20-25 minutes. remove and place on wire rack to cool
  9. while scones are cooling, soften cream cheese and mix all ingredients for the frosting together. 
  10. after scones are cooled, spread frosting on top of each scone and enjoy!

I loved these ones a lot! I was in a fall mood, and these hit the spot perfectly. The original recipe was from artful homemaking, and I adjusted it slightly to what I felt would work best. I also did cream cheese frosting instead of maple glaze because cream cheese and pumpkin go perfect together in my opinion! I didn't melt the cream cheese quite enough,
so the frosting was a little chunky but still super yummy. Loved this delicious fall treat and will definitely make again.
