Blog Post 9: Sourdough Cinnamon Rolls
Sourdough Cinnamon Rolls Recipe
Rolls:- 150 grams active starter
- 325 grams warm water
- 25 grams honey
- 20 grams oil (avocado, vegetable, or any other flavorless oil)
- 500 grams bread flour
- 10 grams salt
Cinnamon Sugar Filling:
- 78 grams melted butter
- 2 tablespoons cinnamon
- 99 grams sugar (brown or cane)
Icing:
- 225 grams powdered sugar
- 1 tablespoon cinnamon
- 75 grams melted butter
- 1 tablespoon vanilla
- milk as needed (I used about 10-15 grams)
Instructions:
- mix water with starter, honey and oil. whisk till combined
- add flour and mic with dough hook or wet hands till dough is combined and formed
- once fully combined, cover with tea towel and let rest for an hour on counter
- after one hour, add salt to dough and mix using wet hands
- let dough rest for another 30 minutes
- after 30 minutes, you will begin your stretch and folds. you will do a total of 4 rounds of stretch and folds, 30 minutes apart
- after stretch and folds, make sure dough passes windowpane test
- let dough rest for another hour covered
- turn dough onto oiled or bare surface
- spray rolling pin with water or oil and roll out dough into a rectangle about 12 inches wide and 15 inches long (make sure there are no air pockets)
- mix cinnamon and sugar in a bowl for filling
- spread melted butter over entire surface of dough
- sprinkle the cinnamon and sugar evenly over the dough
- slowly roll dough trying to keep it tight without tearing dough
- pull the dough gently until it forms a long tube that is evenly round end to end
- cut into evenly sized rounds and place into oiled pan touching slightly
- let rolls rise on counter until the push tightly together (about 60-90 minutes)
- preheat oven to 400 degrees F while rolls rise
- bake rolls for 10 minutes at 400 then reduce temp to 350 and cook for 20 more minutes
- once rolls are fully cooked through the middle, remove and let cool
- mix together powdered sugar, melted butter, vanilla, and cinnamon
- add milk as needed to get the consistency you want
- pour icing over slightly warm rolls so it melts into the centers and enjoy!

This week I went back to a family favorite and made some cinnamon rolls! I got the original recipe from homemade food junkie and adjusted it to work for me. These are so delicious its honestly hard to explain. They are soft and creamy, with the perfect amount of sweetness from the center and icing. This is one of my personal favorites and I love to eat them for breakfast or as a dessert!
